Buying pre-made gluten free wraps is problematic. Often they are overpriced and are made with ingredients that are not health promoting. They often contain egg products, oils, hydrogenated fats and preservatives to extend their shelf life, but not great for extending ours! So after some trial and error I've come up with this super simple recipe that never fails. All ingredients can be found in your local supermarket. These wraps are flavoured with herbs and garlic but you could leave them plain and use them for a dessert. You need a good non-stick pan and something to stuff them with. Kid approved, I'm sure they will become a favourite in your house too!
INGREDIENTS
1 cup besan flour
1 cup lentil flour
1 cup tapioca flour
2 cups water
1 teaspoon salt
Flavouring: chopped parsley, rosemary, thyme, fresh garlic
METHOD
Mix all dry ingredients well in a large bowl. Add water and whisk until all lumps are removed (alternatively you could do this in a food processor or blender, adding more water if required). Chop herbs and garlic and add to batter. Heat a large non-stick pan and add about 1/2 cup of mixture and swirl until the surface of the pan is completely covered, no oil required. Be patient, allow to cook until edges begin to lift. Flip over and cook on the other side.
Stuff with loads of rainbow vegetables, tofu scramble, avocado, hummus, or any plant foods you love!
Makes about 12 wraps.
