Speculaas spiced gingerbread cookies

When I was little my Oma always had a packet of speculaas biscuits in her cupboard. I haven't eaten them for years but recently came across a speculaas spice mix and had to see if I could create the same flavour as my Oma's version. This recipe is so easy and delicious, everyone will love them!

INGREDIENTS

2 cups almond meal

3 tbsp maple syrup

3 tsp Speculaas spice mix (or pumpkin pie spice)

1/4 tsp sea salt


METHOD

Preheat an oven to 160 degrees C.


Mix the almond meal, spices and salt in a large mixing bowl. Add the maple syrup and mix through. It will look crumbly at first but should come together in a ball with some kneading. You can add a teaspoon of water at a time if it doesn't form a ball of dough.


Roll the dough between two sheets of baking paper until it's a few millimeters thick. Use a cookie cutter to make the gingerbread people, or you could use any shape you like.


Transfer to a lined baking sheet and bake for 10-12 minutes. Make sure to watch them closely so they don't burn!
