I thought it would be fun for the kids if we could make donuts at home. Commercial donuts are not usually vegan, contain wheat flour and loads of oil and are definitely not health promoting. So I had to get creative. I ordered some silicone donut moulds on eBay and whipped these up. You can imagine their surprise when they came home from school! My youngest gave them full marks!
INGREDIENTS
1 cup brown rice flour
1/2 cup buckwheat flour
1/2 cup almond flour
2 tablespoons panela sugar*
2 tablespoons flaxseed meal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
pinch of salt
1 cup soy milk
2 teaspoons apple cider vinegar
METHOD
Combine flaxseed meal with 4 tablespoons water and set aside. Place flours, sugar, baking powder and soda, spices and salt in a bowl and combine well with a whisk. Add flaxseed mixture, soy milk and vinegar and stir until it forms a smooth batter. Spoon into silicone donut moulds and bake at 200 degrees C for 12 minutes.
*Panela sugar is simply evapourated sugar cane juice. It retains all of the vitamins and minerals and is minimally processed. Also sold as rapadura sugar. Coconut sugar could also be used.
